Healing Chicken “Noodle” Soup

This is a great soup to have on hand during the winter months or when you want to build up your immune system. You can add extra vegetables such as turnips or parsnips or some chopped green kale. Serve this soup with a side salad as a full meal or as is garnished with fresh herbs such as parsley, rosemary or fresh thyme.

Instructions

  1. Place chicken in a large soup pot and cover with water by 2 inches.
  2. Bring water to a boil until foam forms on top of pot. Skim foam off and discard.
  3. Add all other ingredients except for the cabbage to the pot and bring to a rolling boil then reduce heat to a simmer.
  4. Cover pot leaving a crack and simmer for 1-1 ½hours until meat begins to fall off the bone.
  5. Turn off heat and remove chicken from pot and allow chicken to cool enough to handle. Remove meat from bone and place back in the pot along with cabbage.
  6. Bring soup back to a rolling boil then reduce the heat to allow soup to simmer for 5 more minutes until cabbage softens. Turn off heat and serve warm topped with chopped fresh herbs.
