How can we support our immune system with food? Focusing on unprocessed, whole foods, nutrient dense fruits and vegetables, and healthy fats provides the body with the vitamins, minerals and antioxidants it needs to help your body fight off infections and stay healthy.
Immune Boosting Green Smoothie
2 teaspoons finely grated fresh ginger
2 green apples cut into slices
2 small or 1 large banana
Pinch of sea salt
1-2 tablespoons honey (depending on how sweet you want it)
Juice of ½ lemon
1 13.5 oz. can of coconut milk
2 packed cups baby spinach leaves
5-10 fresh mint leaves
2 cups ice cubes
Instructions
1. Peel and grate ginger and set aside.
2. Cut apples into slices and add them to a (preferably) high-speed blender along with grated ginger, banana, sea salt, honey, and lemon juice.
3. Add coconut milk to blender and blend until smooth.
4. Next add the spinach, mint, and ice and blend for at least 30 seconds or until ingredients are smooth.
5. Add more ice if desired and extra honey if you would like it sweeter.
Serves 2
Healing Chicken “Noodle” Soup
This is a great soup to have on hand during the winter months or when you want to build up your immune system. You can add extra vegetables such as turnips or parsnips or some chopped green kale. Serve this soup with a side salad as a full meal or as is garnished with fresh herbs such as parsley, rosemary or fresh thyme.
2 bone in chicken breasts
2 bone in chicken legs/thighs
1 large onion chopped
4 medium sized carrots sliced into rounds
2 celery stalks, sliced
2 garlic cloves, minced
2 teaspoons chopped fresh rosemary or 1 teaspoon dried
2 teaspoons chopped fresh thyme or 1 teaspoon dried
1 teaspoon turmeric powder
1 tablespoon fresh grated ginger
2-3 teaspoons sea salt
Large pinch of pepper
3 cups very thinly sliced green cabbage for the “noodles”
Instructions
1. Place chicken in a large soup pot and cover with water by 2 inches.
2. Bring water to a boil until foam forms on top of pot. Skim foam off and discard.
3. Add all other ingredients except for the cabbage to the pot and bring to a rolling boil then reduce heat to a simmer.
Cover pot leaving a crack and simmer for 1-1 ½hours until meat begins to fall off the bone.
Green Mojito Juice
2-3 limes, peeled
2 cucumbers cut into 4 inch spears
1-2 green apples
6-8 celery stalks
1 medium bunch of mint
2 inch piece of ginger peeled
Instructions
Run all ingredients through a juicer or alternatively blend all ingredients in a blender with a little water and strain through a nut milk bag or cheese cloth.
Prep/Cook time: 10 minutes
