Spring Smoothie Protein Bowl Recipe

Smoothie Protein Bowl

1 cup frozen peaches or nectarines
1 cup frozen berries (strawberry, blueberry, raspberry)
1 frozen banana, sliced
1 ¼-½ cup milk of choice or just enough to blend
2 tablespoons almond butter
1 scoop plain or vanilla protein powder (optional)
1 teaspoon vanilla extract (optional)

Topping options
Granola
Toasted coconut pieces
Chia seeds
Hemp seeds
Sliced fruit or berries

Instructions

Add smoothie bowl ingredients to a blender and blend until smooth. If you need to add more milk slowly add more just to blend to keep your smoothie thick. Top with any toppings of choice and serve.

Summer Smokey Corn Salad Recipe

Smokey Corn Salad

Dressing

¼ cup of avocado oil
Juice of 1 large lime (or 2 small)
1 tablespoon apple cider vinegar
2 teaspoons honey
2 garlic cloves minced
1 teaspoon smoked paprika
¾ teaspoon salt
½ cup chopped cilantro leaves

Salad

3 cups fresh corn kernels (3 ears of corn)
6-7 cups chopped romaine lettuce
1 cup cherry tomatoes cut in half
1 medium red pepper sliced thin
1 green onion sliced thin
¼ cup thinly sliced red onion

Instructions

1. Prep all salad ingredients: Remove corn kernels from corn, chop the romaine lettuce, cut the cherry tomatoes in half, slice the red pepper, green onions and red onions and set aside.
2. Add dressing ingredients to a small bowl and whisk well until combined.
3. Place all salad ingredients in a large bowl.
4. Toss salad well making sure to mix everything evenly.
5. Add all dressing to salad and toss again to coat.
6. Taste and add a sprinkle of salt, more lime, or some pepper if desired.

Summer Fruit Salad with Lemon Zest and Mint Recipe

Fruit Salad with Lemon Zest Dressing and Mint

2 cups green or red grapes cut in half
2 cups sliced strawberries
2 cups blueberries
2-3 tangerines or 1 orange peeled, slices cut in half
2-3 kiwis peeled and cut into bite sized pieces
Dressing:2 teaspoons lemon zest
Juice of one medium sized lemon
10-15 mint leaves finely chopped
2 tablespoons honey

Instructions

1. In a large bowl add grapes, strawberries, blueberries, kiwis and tangerines.
2. Mix well to combine.
3. Add all dressing ingredients to a small bowl and whisk well.
4. Add dressing to the fruit salad and toss to coat.
5. Serve with extra chopped mint sprinkled on top if desired.

Serves 4-6
