Grain Free Maple Pecan Granola

Ingredients
- 2 cups loosely chopped pecans
- 1 cup large coconut flakes
- 3 tablespoons avocado or melted coconut oil
- 3 tablespoons chia seeds
- 3 tablespoons maple syrup
- ½ teaspoon sea salt
- 1 teaspoon vanilla extract
- Optional: 1 cups chopped dried tart cherries or any other dried fruit
Instructions
- Instructions:
- Line a baking sheet with parchment paper and preheat the oven to 300°F.
- Add chopped pecans and coconut flakes to a bowl and mix well.
- In another bowl, whisk together the avocado or melted coconut oil, chia seeds, maple syrup, sea salt and vanilla extract.
- Pour the wet ingredients onto the pecan and coconut mixture and combine well.
- Spread out evenly on the parchment lined baking sheet.
- Bake for 30 minutes or until golden brown.
- Remove from the oven and allow to cool for 10 minutes then add dried chopped cherries or other fruit if desired.
- Store in an airtight container for up to 2 weeks.
