Grain Free Maple Pecan Granola

Ingredients

  • 2 cups loosely chopped pecans
  • 1 cup large coconut flakes
  • 3 tablespoons avocado or melted coconut oil
  • 3 tablespoons chia seeds
  • 3 tablespoons maple syrup
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • Optional: 1 cups chopped dried tart cherries or any other dried fruit

Instructions

  2. Line a baking sheet with parchment paper and preheat the oven to 300°F.
  3. Add chopped pecans and coconut flakes to a bowl and mix well.
  4. In another bowl, whisk together the avocado or melted coconut oil, chia seeds, maple syrup, sea salt and vanilla extract.
  5. Pour the wet ingredients onto the pecan and coconut mixture and combine well.
  6. Spread out evenly on the parchment lined baking sheet.
  7. Bake for 30 minutes or until golden brown.
  8. Remove from the oven and allow to cool for 10 minutes then add dried chopped cherries or other fruit if desired.
  9. Store in an airtight container for up to 2 weeks.
