Italian Chickpea Pasta Salad

Ingredients
- 8 ounces chickpea pasta
- 1 medium sized cucumber or English cucumber, seeded and cut into matchsticks
- ¾ cup black or green olives cut in half
- 1 cup cherry tomatoes sliced in half (optional)
- ½ cup red, orange or yellow peppers sliced thin into 1-inch pieces
- ½ cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon apple cider or red wine vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons Italian seasonings
- ¼ teaspoon garlic powder
- ¾ - 1 teaspoon sea salt
- Dash of pepper
- Optional: Freshly chopped Italian parsley
Instructions
- Cook pasta according to directions on package and set aside.
- Add cucumber, olives, cherry tomatoes and peppers to the pasta and toss well.
- Whisk together Dijon mustard Italian seasonings, garlic powder, sea salt and pepper.
- Pour dressing ingredients over pasta and toss well to coat all ingredients.
- Taste and adjust seasonings with more salt, vinegar or lemon and top with chopped Italian parsley if desired.
