Italian Chickpea Pasta Salad

Ingredients

  • 8 ounces chickpea pasta
  • 1 medium sized cucumber or English cucumber, seeded and cut into matchsticks
  • ¾ cup black or green olives cut in half
  • 1 cup cherry tomatoes sliced in half (optional)
  • ½ cup red, orange or yellow peppers sliced thin into 1-inch pieces
  • ½ cup olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon apple cider or red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons Italian seasonings
  • ¼ teaspoon garlic powder
  • ¾ - 1 teaspoon sea salt
  • Dash of pepper
  • Optional: Freshly chopped Italian parsley

Instructions

  1. Cook pasta according to directions on package and set aside.
  2. Add cucumber, olives, cherry tomatoes and peppers to the pasta and toss well.
  3. Whisk together Dijon mustard Italian seasonings, garlic powder, sea salt and pepper.
  4. Pour dressing ingredients over pasta and toss well to coat all ingredients.
  5. Taste and adjust seasonings with more salt, vinegar or lemon and top with chopped Italian parsley if desired.
