Strawberry Coconut Agar Pudding
Agar-agar (also known as agar) is a vegetarian gelatin substitute that is derived from red algae and used in a variety of Asian desserts. This strawberry agar pudding is a satisfying dessert that is high in soluble fiber, improves digestion, relieves constipation, and is a good source of iron while not being too sweet.
Ingredients
- 2 cups coconut milk (substitute any milk alternatives)
- 2 tablespoons agar-agar
- 2 cups strawberries, trimmed and cut in half
- ½-1 teaspoon lemon zest
- Pinch of sea salt
- 1-2 tablespoons maple syrup or honey or to taste (optional)
- Optional toppings:
- Sliced strawberries
- Blueberries
- Shredded coconut
- Instructions:
- 1. Add coconut milk and agar to a saucepan. Bring to a boil, reduce heat, and simmer for 4-5 minutes, whisking occasionally, until agar is dissolved.
- 2. Allow mixture to cool for 10 minutes then add it to a blender with strawberries, lemon zest, and sea salt. Add any optional sweetener of choice.
- 3. Pour liquid into small bowls and place them in the refrigerator for 2 hours or until they set.
- 4. Top with desired ingredients.
